Good vs. Great: Service

It was once told to me: “You can serve Kraft Mac & Cheese and charge $15 a plate, as long as you have good presentation and great servers”. While you may disagree; let me ask you this: How many times have you gone back to an establishment that didn’t have the best food or drink, but the server or bartender made you laugh and provided an experience you enjoyed? That is what is at the heart of outstanding service. The ability of a server/bartender to create an experience that leaves you wanting more.

There are many styles of service from “synchronized white glove” to “drop and run”. The key for management is to find the style that fits their establishment’s atmosphere. Personally I would rather have a server who is having fun and enjoying their job compared to one that is stuffy and “proper”. That is why I frequent establishments with that specific type of service. Take a minute and think of your favorite restaurant…. now picture your server. What is it you like about them? Are they professional, are they enjoying themselves, are they interacting with your children? A great server does all of these things.

A good server is responsive to their guest’s needs, while a great server anticipates the needs of their guests. If a guest orders chicken wings a great server will have extra napkins and wet wipes on the table. If a guest’s drink glass is less than half full a great server will immediately ask if that guest would like a refill. These small tasks enhance the guest experience. A great server will make each table feel as if they are the most important table in the restaurant.
